It's Halloween and although it's not really celebrated here in Oz, my man and I usually organise a party, a dinner, or in today's case a barbeque. Not that we need any excuse to have people over, but it's good to have an excuse to bake a cake and decorate it!
So, if you haven't organised anything spooky for your day here's something to keep you busy!
Boo! Chocolate Strawberry Cake: Gluten Free Recipe
Adapted from Let Her Bake Cake
1 3/4cups gluten free plain flour
3/4cup cocoa powder
1 1/2tsp baking soda
1tsp gluten free baking powder
3/4cup castor sugar
3/4cup light brown sugar
1Tbsp instant espresso powder, dissolved in 1 cup hot water
1/4cup vegetable oil
1 1/2cups buttermilk
2tsp pure vanilla extract
Preheat oven to 175Celcius and grease and line 2 x 9inch round spring form pans
Sift together the flour, cocoa, salt, baking soda & powder in a large bowl. Add the sugars and whisk.
In another bowl, or large jug, whisk together the wet ingredients until combined.
Pour the wet ingredients into the flour mixture and stir until there are no lumps.
Pour batter between the two pans and bake for approximately 30minutes.
Remove from oven and with a clean tea towel gently press down the tops of the cake until flat. This will save you having to cut it flat later. Allow to cool completely.
Place one cake on servig platter and dollop a few tablespoons of strawberry jam on top. Spread across cake, but not all the way to the edges. Place the second cake on top bottom side up. Refrigerate whilst you make some buttercream frosting.
Decorate as you wish and serve!
