
Don't you just love the weekends? Those two days between Friday and Monday where the evenings are ours to do as we wish, the afternoons ripe for (possibly boozy - but I'll deny it all) lunches with your girlfriends and lazy mornings sleeping in in your big bed all by your self whilst your fiance is out riding his bike. Yep, that was my weekend this weekend, although, I must say my gorgeous man did make me dinner last night, pick me up after the deny-it-all-boozy-lunch (that may have extended on into the evening in a not-so-boozy-manner - thank goodness - as I feel I can't handle many of those these days!) then we walked down to the Prahran Markets with me on Sunday morning for some fresh fruit at veg.
Oh! Which reminds me - did you know there's a new gluten free store there at the Prahran Markets? Yep, there is and it's packed full of gluten free goodies, so you should check it out whilst you're buying your gluten free snags from the butchers next weekend...
After a long day on Saturday all I wanted on my return from the markets was something tasty for brunch. I've been slowly getting my man to eat avocado. He knows that avocados are rich in vitamin C, high in fibre and folate and contain natural antioxidants such as Vitamin E. Yep, he knows they're pretty fab, but he's never liked the flavour and wasn't to fussed on the texture either, so, I took some inspiration from a recent breakfast out and made this brunch for him combining the avocado with a few of his favourite things - mint, lemon and feta. Smash it onto some crispy toast (more on that below), top with a fried egg and ta-da fiance friendly avocado! Highly recommended.

Avocado & Mint Toasts with Eggs
Makes enough for two
1 large ripe avocado
3-4 fresh mint leaves
1-2tsp lemon juice
1-2tablspoons Persian feta
Pepper to taste
Crunchy gluten free toast + fried eggs (to your liking) to serve.
Cut your avocado in half and scoop out the flesh into a small bowl. Smash together with the remaining ingredients.
Spoon and spread onto toasted bread with an extra sprig of mint and crumble of feta Top with a fried egg and some cracked pepper. Also delicious without the egg!
Enjoy with your favourite person or people.


I'm not a Queensland reader so you can leave me out of the giveaway, but I just wanted to say that the description of your weekend has made me want to go back to friday right now and redo it all! My redo would include making these delicious sounding avocado toasts. I actually have all the necessary ingredients!

Hmmm, I would probably put some creamy scrumbled eggs on my toast or poached eggs and hollandaise sauce... Any egg combo would please me!
