Boy, oh boy is it hard to find pre-made
Gluten Free gnocchi
in Perth! In-fact it was so hard, that it
isn't even from Perth
! It's from Melbourne! Which, is all thanks to my Mum's efforts at the Gluten Free Show in Melbourne a few months ago (I'm still getting through the sample packs - thanks Mum!) and the cooking? Well, that is all thanks to my fabulous man (no, that is not a loved up valentine's exaggeration, he really is fabulous, well, I think so anyway!) who after cooking a wonderful Pork Roast a few nights ago came up with this fabulous, and of course, gluten free dish for dinner....
Gluten Free Gnocchi with Pork & Basil
1packet Gluten Free Gnocchi
1/2cup Gluten Free vegetable stock
1/4-1/2cup dry white wine
2tblspn Basil Pesto
5slices leftover roast pork (5mm thick, sliced lengthways)
handful green beans, or peas
Parmesan, to serve
Heat frypan and lower heat. Add a pesto, stock and 1/4cup wine, stir until combined. Add pork and beans (or peas). Season with pepper, adding the rest of the wine if your tastebuds would prefer it.
Cook the Gluten Free Gnocchi in a large pot of boiling water. Remove individual gnocchi once they have risen to the surface and add to sauce, continue until all are cooked. Gently stir sauce, careful not to squash the gnocchi. Spoon onto plates and top with finely grated parmesan.
Enjoy with a glass of chilled white wine.
